Potato Chip Cookies

36 cookies- 2 points each

  • 1 cup lower fat margarine
  • ¾ cup sugar
  • 1 ½ cups flour
  • 1 tsp vanilla
  • ¾ cup Lays Light Potato Chips (crushed)
  • ¼ cup confectioner’s sugar

Cream margarine and sugar till well blended. Add flour gradually. Stir in vanilla and potato chips. Drop by spoonfuls on ungreased baking sheet. Bake at 325 for 15-20 minutes. Sprinkle with confectioner’s sugar after baking. Cookies may be frozen before sprinkling with sugar.

These sound so interesting :) Another thing to try is taking wavy potato chips & dipping them in chocolate - sooo yummy!

I think I'd have to try these before making them myself...at least the ingredients are inexpensive just in case I don't like them.
